VINEYARD
A traditional Friuli dry white wine originally known as Tocai. This varietal is amoungst the most representative of the region.
DOC FRIULI COLLI ORIENTALI
SENSORY CHARACTERISTICS:
A dry white wine with straw yellow almost greenish colour. The bouquet recalls bitter almonds, sage, elderflower and alfalfa. The flavour is dry, soft, full and harmonious.
VARIETIES USED, WITH PERCENTAGE:
Friulano 100%.
PRODUCTION ZONE AND EXPOSURE:
Hillside vineyards with an eastern exposure.
TRAINING SYSTEM:
Sylvoz dwarf; grape yield 1.60 kg per strain.
SOIL TYPE:
Grown in the Ronco area where the high percentage of clay (called ponca) and hillside exposition give the wines great depth, aroma and persistence. Yield is 7/8,000 kg per hectare.
HARVEST PERIOD:
Harvesting is done by hand into baskets at different times, the first part is harvested in early September, the remaining part 10 days later.
VINIFICATION:
Soft pressing of the whole grape. A part is also macerated for a few hours. The must is cold settled and fermented at a controlled temperature.
MATURING AND AGING:
It is left to rest on the yeasts until March. Bottling is done the following spring.
FOOD PAIRINGS:
Great width hors d’oeuvres, fish, snails as well as with white meats, and matchless with prosciutto. Friulano FCO is the classic Tajut (glass of wine) enjoyed with friends.
