VINEYARD
This wine is made from an ancient autochthonous variety cultivated as far back as Roman times. Its lovely bouquet is absolutely unmistakable.
DOC FRIULI COLLI ORIENTALI
SENSORY CHARACTERISTICS:
A native Friuli wine which has been enjoyed at court across Europe throughout history. White and dry, straw yellow in colour width green highlights. Elegant flowery and fruity aromas width a sustained acidity well-balanced in the body.
VARIETIES USED, WITH PERCENTAGE:
Ribolla Gialla 100%.
PRODUCTION ZONE AND EXPOSURE:
Vineyards in north eastern and south eastern exposure.
TRAINING SYSTEM:
Dwarf Capuccina and Sylvoz.
SOIL TYPE:
Grown in the Ronco area where the high percentage of clay (called ponca) and hillside exposition give the wines their depth, aroma and persistence. Yield is 9/10,000 kg per hectare.
HARVEST PERIOD:
Late September by hand into baskets.
VINIFICATION:
Short cold maceration of the destemmed grapes (at 7°C for 7/8 hours) and soft pressing. Cold settled (at about 5°C) and fermentation with selected yeasts at a controlled temperature (18°C).
MATURING AND AGING:
Left to rest on the yeasts until the spring (when bottling is done) and aged in the bottle for a few months.

Cold hors d’oeuvres, sweet-sour sauces, soups, vegetables and fish.
