VINEYARD
This noble variety has found its ideal microcimate in Friuli. The ageing gives it a spicy bouquet with unique peppery notes.
DOC FRIULI COLLI ORIENTALI
SENSORY CHARACTERISTICS:
The wine is unmistakable for its ruby red or violet colour and grassy aromas. During aging fruity and spicy notes of green pepper and nutmeg emerge. The wine has an austere, imposing body and a graceful tannin content.
VARIETIES USED, WITH PERCENTAGE:
Cabernet Franc 100%.
PRODUCTION ZONE AND EXPOSURE:
The vines are located in the town of Prepotto, Province of Udine, at 160 m above sea level with a south eastern exposure.
TRAINING SYSTEM:
Dwarf Guyot and Sylvoz.
SOIL TYPE:
Eocene marl rich in potassium and microelements, well-balanced clay and rock fragment content, low in organic matter.
HARVEST PERIOD:
Late September with manual collection into baskets.
VINIFICATION:
Destemming and pressing of the grapes followed by maceration for more than a week with daily delestage. The malolactic fermentation is completed in wood.
MATURING AND AGING:
In stainless steel tanks and barriques for two cycles for around 11 months. Further aging in the bottle for a few months before sale.
FOOD PAIRINGS:
This structured wine is perfect with grilled meats, roasts, strongly flavoured dishes and hard cheeses.
