VINEYARD
One of our most sought after wines. It has a caressing nature alongside a unique, complex bouquet. The flavour is lively and fresh.
DOC FRIULI COLLI ORIENTALI
SENSORY CHARACTERISTICS:
White wine with delicate greenish highlights. The bouquet is decisive recalling tomato leaf, green pepper, sage, mint, white pear, elderflower, papaya and other exotic fruits. On the palate it has a mineral and aromatic character. This is a full-bodied wine with good acidity.
VARIETIES USED, WITH PERCENTAGE:
Sauvignon 100%.
PRODUCTION ZONE AND EXPOSURE:
Vineyards in eastern and north eastern exposure of the cellar.
TRAINING SYSTEM:
Dwarf Guyot and Sylvoz.
SOIL TYPE:
Marl width balanced clay and rich rock fragment (flysch) content. The yield is 0.8/1kg per plant.
HARVEST PERIOD:
Early September by hand into baskets.
VINIFICATION:
Soft pressure of the grape. A percentage is cold macerated (at 5°C) for 7/8 hours. Cold settled and then decanted for fermentation at a controlled temperature of 13-14°C.
MATURING AND AGING:
Left to rest on the yeasts until the spring (when it is bottled) and aged in the bottle for a few months.
FOOD PAIRINGS:
Best as an accompaniment to raw and cooked fish, first courses, soups, asparagus and fried fish dishes.
