VINEYARD
This classy, elegant wine is produced from Chardonnay and Sauvignon grapes. The Sottocastello is one of the winery’s star wines.
DOC FRIULI COLLI ORIENTALI
SENSORY CHARACTERISTICS:
Wine with complex aromas recalling ripe fruit, wild flowers and eastern spices all well blended width an aroma of roasted wood. On the palate this wine will amaze with its great structure and softness.
VARIETIES USED, WITH PERCENTAGE:
Chardonnay 80% – Sauvignon 20%.
PRODUCTION ZONE AND EXPOSURE:
In the town of Prepotto, Province of Udine, close to the Slovenian border. The vines are planted in terraces on east-facing hills.
TRAINING SYSTEM:
Sylvoz dwarf; grape yield 0.8kg per strain.
SOIL TYPE:
The vineyard is planted in moderately loose-packed soil with a good percentage of rock fragments which brings out the wine’s fine, elegant aromas.
HARVEST PERIOD:
Manually into baskets in late September when the grapes reach full maturity.
VINIFICATION:
After harvesting the grapes are destemmed and then cold macerated in an environment saturated with inert gasses. This followed by soft pressing of the grapes and cold settling of the must. The settled part is transferred into barriques where first alcoholic then malolactic fermentation takes place.
MATURING AND AGING:
Once fermentation is complete daily topping-up and bâtonnage (bottonate) of the barriques is done until March. Following this aging in wood the wine is decanted, filtered and bottled where it rests for a further 6 months.

This is a wine for meditation, perfect width fine baked fish dishes and smoked foods..
